Everyone loves a pizza night but take aways are so hit and miss. They’re either really greasy, fake cheese or very expensive.
I made three medium pizzas with fresh dough within 2 hours including cooking time. This would be a great family cooking together night or great for a catch up with friends, like I did. You can do the preparation while the dough is sitting in a warm place.
bacon brie and cranberry pizza
500g strong bread flour
1/2 tsp fine salt
7g packet of fast acting yeast
300ml warm water
2 tsp extra virgin olive oil
1/2 tbs caster sugar
mix the flour and salt in a large bowl • mix the water yeast sugar and oil in a jug • leave the water mixture for a couple of minutes • make a well in the flour • pour in the water mixture • mix with a knife • when combined tip on to a floured surface • knead for 5 minutes until smooth • place in a floured bowl • sprinkle with flour • cover with a damp cloth • sit the bowl in a warm place for an hour • it should double in size
tip the dough onto a floured surface • knead for a couple of minutes to knock the air out • divide the dough into three for medium pizzas • roll each section into a ball • roll each one out using a rolling pin • try to keep the circular shape • place the dough on a flat or pizza tray • leave the dough for 15-20 minutes to rise again
grill the bacon until crispy • use the back of a spoon to spread the cranberry sauce on the base • crumble or place on the bacon • slice the brie • arrange the brie on the pizza • sprinkle with thyme • bake at 180 degrees until golden and bubbling
I also made a chicken chorizo and mozzarella pizza and a classic margarita! It feels very satisfying making and eating a homemade pizza and even though it’s comfort food there’s no guilty feelings.
