I’ve got loads of food in the freezer that I needed to use and this was my super fast dinner this evening.
I had some frozen fresh pasta but any pasta will do, this will just add to your cooking time. I also used gruyere cheese, I would think that most would be suitable as 50g just adds a hint of salty sweetness.
chicken chorizo and mushroom pasta
2 chicken breasts
8 slices chorizo
1 tbs rapeseed oil
50g gruyere cheese
1 tbs extra virgin olive oil
Salt and pepper
boil the kettle • add the pasta to the pan • cook according to instructions • add the rapeseed to a frying pan • fry the chicken until brown and crispy • remove from the pan and set aside • slice and fry the chorizo • add the sliced mushrooms • season with salt and pepper • add the chicken back to the frying pan • remove the pasta from the water into the frying pan • toss together • add the olive oil and cheese • toss together and again • serve with a sprinkle of pepper on top
