When you can’t decide which flavour you want, have both.
It’s been a while since I’ve had pancakes for breakfast so a cold and lazy Sunday morning is a perfect time to treat myself.
My favourite flavour is banana, crispy bacon and maple syrup. I can eat a never-ending pile of these. I also tried blueberry today with a drizzle of maple syrup. There’s an endless amount of combinations. You can go savoury or sweet. If you’re planning to have a savoury combination then don’t add the vanilla but I do like to keep it in if I do banana, bacon and maple.
135g plain flour
5g baking powder
30g golden caster sugar
1 large egg
30g butter, melted
1 tsp vanilla extract
sieve the flour, salt and baking powder into a large bowl • stir in the caster sugar • in a separate bowl beat together the egg, milk, vanilla and melted butter • pour the liquid ingredients into the dry ingredients • beat together to create a smooth batter • leave the batter to sit for a couple of minutes
You can cook them as they are or if you want to add some fruit add it now.
heat a nonstick pan on a low heat • do not add oil • use a ladle to pour the mixture into the pan • they should be about 10cm in diameter • when you start to see bubbles on the surface you can flip the pancake • when both sides are golden remove from the pan • pile up and top with your flavourings
