I do cook a lot but every once in a while I have to work on an evening and my other half steps up.
Tonight there was chilli con carne on the menu, well, his version of it. Like all men, he likes to go maverick and ‘throws’ something together. Tonight was no different. In the end the chilli looked nothing like mine or any other I have ever seen. Not only that but it was hotter than the sun and without the condiments I’m not sure how I would have finished my bowl.
On this occasion he really did pull something special out the bag, obviously not the chilli, but a cool and refreshing guacamole. When I tasted it I couldn’t put my finger on what was different but I can honestly say it’s the best guacamole I’ve ever had, don’t tell him though!
It’s light, cooling (thank god), refreshing, colourful and tangy. The next time you make mexican try this! You’ll never look at guacamole the same again.
cucumber and avocado guacamole
half a large avocado
splash of chilli sauce – tobacco
pinch of salt
small bunch of coriander
2 cloves of garlic
splash of milk – almond milk
roughly chop the cucumber and avocado • peel the garlic • juice the lime • remove the stalks from the coriander • add the ingredients together in a bowl • blitz it with a hand blender until smooth
