It’s been a warm day and all I can think about is how summer is coming. I can’t stick to my winter comfort food any longer. So, I’ve been to the gym and then made this light and fresh soup to kick start my new spring diet!
Tom Yum Soup
500ml chicken stock
1 lemongrass, bruised and cut in half
1 tbs galangal paste
small bunch of coriander, stalks chopped
2 lime leaves
12 large prawns
2 tbs Thai fish sauce
1 green chilli, finely chopped
juice of 1 lime
1 packet straight to wok noodles
1 red pepper, sliced
bring the stock to the boil • add the lemongrass, galangal, coriander stems, lime leaves • summer for 5 minutes • add prawns, fish sauce, chill, noodles, pepper and lime juice • summer for 5 minutes • garnish with the coriander and chilli
